Pochero is a delicious and savory stew originating from Spain, but now with a Filipino twist to it. Pork belly is sautéed in with garlic, onions and tomatoes to add more flavor and depth into the meat. It is then braised in fish sauce and tomato sauce, and finally potatoes and plantains are added for a subtle sweetness to the dish. For color, bok choy is also added. This savory yet slightly sweet dish is a great meal to have with a side of fresh rice for a filling lunch/dinner. It is a very light stew that is great eaten in the springtime for a fresh flavor.
