A mix of two favorite pancits or noodles, and you get Miki Bihon! Made from both rice noodles and egg noodles, this savory dish is simple, classic, and very popular to eat. Miki Bihon derives from Pancit Bihon mixed with Miki noodles; you get two different delicious textures from both noodles. Both noodles are sautéed in soy sauce, oyster sauce, fish sauce, and other seasonings. The noodles are then mixed in with proteins like chicken, beef, or shrimp, with various vegetables like cabbage, carrots and peas. Miki Bihon is then topped with fish balls if requested, and you have yourself a filling and delicious meal for lunch or dinner! Eat it on its own or with things like toast, soup, etc.
