Influenced by Hispanic culture, this very warm and savory rice soup/porridge is delectable during the winter months or cold rainy days. It is a great comfort food when you’re sick or wanting a heavier version of soup. Arroz Caldo or Rice Soup is made with your choice of chicken, beef, or even nothing. It is sautéed with onion, garlic, ginger and then braised in rice and broth. Although it is an appetizer, because it is made with rice, it is very filling and can be a meal on its own. Topped with toasted garlic/scallions/egg and drizzled with fish sauce/lemon, it is a great snack or a homely filling comfort food.
